By default Windows Server 2012 R2 does not have any support for VMware's specialized paravirtual SCSI driver - and hence will not detect any disks upon install the server!
In order to install the drivers we should ensure that we have a virtual floppy disk drive attached to our VM and attach the "pvscsi-Windows2008.flp" image to the drive (within the root datastore under the "vmimages" >> "floppies" folder. During the Windows setup you can then specify third party drivers - pointing it to the drivers on the floppy disk drive.
If your anything like me your proberly wondering why you are using a driver intended for Server 2008 - well I am not sure to be pefectly honest - but vSphere 5.5 does not appear to have a dedicated driver for 2012 - although the one mentioned above does work with 2012 R2.
